Amigos Chili


chili

2.00 lb ground beef
1.00 cup onion -- chopped
1.00 tablespoon garlic -- chopped
0.25 cup chili powder
1.00 tablespoon ground cumin
1.00 can 28 oz. crushed tomatoes with
1 added puree
1.50 cup beef broth
2.00 cup fresh or frozen corn
1 kernels
1.00 can 15 1/4 oz. kidney beans --
1 drained
0.25 cup fresh cilantro -- chopped

Cook beef in heavy large pot over med. heat until brown, crumbling with fork, about 10 mins. Add onion, garlic, chili powder, and cumin and cook 5 mins., stirring frequently. Mix in crushed tomatoes, beef broth, corn, and kidney beans and bring to boil. Reduce heat and simmer until thickened, about 30 mins. Mix in cilantro.
