Perfect Pineapple Salsa

2.00 cup fresh pineapple, diced
0.50 cup jicama, peeled and diced
1 (about 1/3 jicama)
0.33 red onion diced
0.50 cup red bell pepper, diced
1.00 serrano or jalapeno - she

2.00 teaspoon fresh ginger, minced
0.25 to 1/2 t dried small chile,
1 crushed
1.00 tablespoon rice vinegar (not seasoned)

Mix together, keeps about 2 days in refrigerator. I found its better the next morning. You can vary the fresh and dried chiles for heat.
