Spicy Mango Salsa

0.50 cup coarsely-chopped mango
2.00 tablespoon finely-diced red onion
1.00 teaspoon finely-diced jalapeno pepper
2.00 tablespoon fresh lime juice
1 chopped fresh cilantro; to taste
1 salt; to taste
1 freshly-ground black pepper; to taste
Combine the mango, onion, jalapeno, cilantro and lime juice. Season to taste with salt and pepper. Cover and set aside. May be prepared up to 1 day in advance, covered and refrigerated. Bring to room temperature before serving. This recipe yields about 1 cup of salsa.
