Cantaloupe Salsa

2.00 cup diced cantaloupe
2.00 tablespoon minced red bell pepper
1.00 tablespoon seeded, minced jalapeno
1.00 tablespoon minced cilantro
1.00 tablespoon rice wine vinegar
Combine all ingredients in a non-reactive bowl. Chill for 1 hour. Serve with pork, chicken or fish. Makes about 2 cups, or 12 servings.
