Pork Roast Salsa

1.00 small can pineapple rings; drained
2.00 tablespoon red bell pepper; diced
3.00 green onions; sliced fine lengthwise
0.25 teaspoon ground ginger
1.00 oz lemon juice
1.00 oz tequila
1.00 tablespoon fresh mint leaves; chopped
Cut pineapple rings into 1/4-inch pieces. Mix with all other ingredients. Chill very well. Serve with pork roast.
Judi's Notes: This tastes so much better with fresh pineapple. I added a fresh peach to it and it turned out very well.
