Chicken Mole
chicken, mexican, rice
8 chicken breasts
1/4 cup olive oil
1 can chopped green chiles (small)
1 onion; chopped
1 clove garlic; minced
8 oz tomato sauce
1 cup chicken broth
2 teaspoon chile powder
1 teaspoon salt
2 tablespoon sugar
1/4 teaspoon tabasco
2 whole cloves
1 oz unsweetened baking chocolate
2 tablespoon creamy peanut butter
1 rice; cooked, hot
Brown chicken in oil and remove. Saute onion and garlic and Add green chiles. Add remaining ingredients. Stir until chocolate is melted. Replace chicken and cook over low heat for 30 minutes. Serve over cooked rice.
