Plum Tomato Salsa With Sherry Vinegar

6.00 plum tomatoes, peeled,
1 seeded, and cut into 1/2
1 dice
1.00 medium shallot, sliced thin
1.00 serrano chile, seeded and
1 sliced thin
2.00 tablespoon sherry vinegar
0.50 cup olive oil
0.50 teaspoon chopped fresh thyme, or
1 1/4 ts dried
1.00 tablespoon chopped fresh cilantro
1.00 tablespoon chopped fresh parsley
1 salt and ground black
1 pepper to taste.
Mix all ingredients together in medium bowl. Serve within 2 hours.
